The Journey Behind Our French Butter Cookies

A story of butter, texture, obsession, and balance


Before we ever decided to launch our French butter cookies, we didn’t start with confidence.


We started with questions.


What makes a butter cookie truly “French”? Why does one cookie feel rich and elegant, while another feels flat and forgettable? And most importantly—what butter actually deserves to carry our name?


The search for the right butter


We tested more butter than we can count.



Some were too oily. Some too light. Some smelled amazing but disappeared after baking. Others held structure but lost all character in aroma.


It became clear very early on: butter is not just an ingredient in a cookie—it is the identity of the cookie.


After many trials, we chose one that changed everything: Elle & Vire.



Not because it is famous. But because it performed.


The aroma stayed warm and clean after baking. The texture became refined—crisp edges with a tender bite. And the flavour? It didn’t just sit on the tongue. It developed.


That was the moment we stopped searching.


Why French butter cookies?

We call it a French butter cookie because it is built on a French-style foundation: simplicity, quality ingredients, and respect for technique.


But more than that, it is about experience.


The way it feels when you take the first bite. The way it melts slightly before it crumbles. The way butter lingers—not overwhelms.


Every detail matters, especially butter.


The heart of it: Florentine

Our main creation is inspired by Florentine cookies.


But we didn’t want the usual version.


We tried many interpretations before settling on our own direction. Most versions were either:

  • Too crunchy, almost sharp on the teeth

  • Too sweet, where caramel loses its depth

  • Or too heavy, where almonds dominate everything else


We didn’t want that.


We wanted something more alive.


Something that feels like contrast done right.


The balance we were chasing

Our idea came from an unexpected place: sneakers.


Yes—sneakers.


The best sneakers are not the most expensive ones. They are the ones that balance everything:

Comfort. Style. Durability. Feeling.


We applied the same thinking to our Florentine.


We wanted:

  • A caramel layer that feels warm and deep

  • A crunch that is present but not aggressive

  • Almonds that support, not dominate

  • And a finish that doesn’t tire your palate


The result is something between structure and softness—something you can keep eating without realizing how many you’ve had.


Why Elle & Vire made the difference

We tried many butters, but Elle & Vire gave us consistency and clarity.


It didn’t fight the caramel. It didn’t overpower the almond. It simply held everything together.

And that is why it stayed.


A cookie shaped by real testing, not theory

This is not a story of perfection from the start.
